fish masala marinade
Masala Prawn Curry
INGREDIENTS
- 1kg fresh prawn cutlets (tail off)
- juice of ½ a lemon
- 1 jar Fish Masala Marinade from Cofresh
- 1 onion diced finely
- 1 tsp minced garlic
- 1 tsp minced ginger
- 100g snow peas washed and de-strung
- ½ cup cream
- salt and pepper
- fresh coriander
- good quality olive oil

METHOD
Marinate prawns using Fish Masala Marinade from Cofresh and juice of ½ a lemon for ½ an hour
prior to cooking.
In a large surfaced fry pan, heat oil and brown onion, garlic and ginger.
Add prawns and all the marinade then simmer till prawns are cooked through and tender.
Stir in seasoning, cream and snow peas, turn off the heat.

Garnish with fresh coriander and serve with steamed rice
