INGREDIENTS
- 250g premium lamb mince
- ½ finely diced mild chorizo sausage
- 4 tbsp Traditional Meat Marinade from Cofresh
- 1 tbsp minced garlic
- 1 tbsp minced ginger
- ½ diced brown onion
- 1 finely diced carrot
- 1 diced stick fresh celery
- ½ finely diced zucchini
- crisp lettuce leaves (cup shape)
- 1 tsp soy sauce
- good quality olive oil
- seasoning
- sour cream & parsley for serving
METHOD
Heat oil in a large fry pan and brown onion, garlic & ginger.
Add chorizo & lamb mince and lightly fry until brown in colour.
Add vegetables, soy, Traditional Meat Marinade from Cofresh and seasoning.
Cook on medium heat until carrot is soft & mince is just moist.
Turn off heat and spoon into crisp lettuce cups.
Serve with a small spoon of sour cream & freshly chopped parsley
