INGREDIENTS
- ¼ cup Jalfrezi Cooking Sauce from Cofresh
- 1 brown onion (cut in half and sliced)
- ½ a red capsicum (sliced length ways)
- 2 tbsp Crunchy Peanut butter
- ¼ cup sweet chilli sauce
- ½ cup coconut milk or cream
- 500g chicken tenderloins sliced into strips
- Salt flakes
- 3 sprigs of fresh coriander (finely chopped)
- Good Quality olive oil
METHOD
Heat oil in a large surfaced fry an and slightly brown chicken.
Add onion and capsicum and stir for 3-4 mins.
Stir in Peanut butter, sweet chilli and Jalfrezi Cooking Sauce.
Add coconut cream and stir until sauce is slightly thickened.
Season and sprinkle with fresh coriander.
Serve with fluffy Jasmine rice.
